Empanadas de platano… or stuffed plaintain empanadas. A most delicious traditional snack! Our great grandmothers used to cook them! They are made with two most natural ingredients of our regions: Beans and plaintain.
Ingredients:
Three or four ripe plaintains (Ripe means really ripe, with black spots in the skin)
Mashed black beans
Oil
A piece of plastic bag, very clean (Wash it with soap).
How to do it:
Boil the plaintains with the skin. As soon as they are soft and the skin can come out easily, take them out of the pot, peel them and mash them, creating a paste.
Once they are mashed, make balls a bit smaller than a fist.
Put the ball on the wet plastic and cover it.
Put a plate over the plastic and the ball and push it, creating sort of a plaintain tortilla . Put a spoon or two of the mashed beans in the center of the plaintain “tortilla”
Fold it over with the plastic creating the “empanada”
Fry them, until they are very well done.
And there you go, enjoy!
(You can also stuff them with white cheese!)
