When you travel in the Northern areas of Costa Rica you see big plantations of papayas… These delicious tropical fruit originated in the tropical Americas. Probably from Mexico and Central America.
Nowadays it’s all over the World and it’s one fo those popular fruits you can see in cocktails as much as in Carmen Miranda’s hat.
It is used as dessert alone, in juice and milkshakes and surprisingly… in soup! Getting to be one of the most delicious, and actually quite refreshing soups in our menus.
To make it, you will need to follow the next recipe:
1 large papaya
Half of a chicken breast
300 grams of cream cheese
2 garlic cloves (Pressed)
1/4 onion (Shredded)
1 tb spoon of butter
Place the butter, pressed garlic and shredded onion in a large pot and sauté over medium heat until the onion is translucent but not browned, about 5 minutes. Add water, chicken in pieces, papaya and cream cheese all together. Let it simmer for 30 minutes.
Remove the chicken pieces and transfer all the ingredients ( Cream chees and chicken stock, papaya, garlic and onion) in the blender and serve.
